How Crawfish Went From the Slums To Become King

With Good Friday two weeks away the Louisiana tradition of Good Friday Crawfish boils will be here soon. People are of course already eating the critter. The local seafood place in my North Louisiana town has already opened up their stand.

The popularity of crawfish though has not always been so even in this state.

The publisher of New Orleans Magazine and Editor/Publisher of Louisiana Life magazine has a good piece here at How the Crawfish Became a Star that does a good job of explaining the relative recent history of all this.
